What is the Best Way to Shred Zucchini for Making Fritters?

You have a few options but my favorite is using a box grater. It’s even easier than grating cheese since zucchini is so soft! You could also use a food processor with a shedding attachment if you don’t have or want to use a box grater.

How Can I Make Sure My Zucchini Fritters Turn Out Crispy?

There are a few steps you can take to prevent soggy fritters from excess moisture or other common troubles from frying fritters! Here are some tips to make the best summer zucchini fritters ever:

  • Squeeze out as MUCH liquid as possible from the shredded zucchini. Make sure you let that zucchini sit in the salt for 20-30 minutes to extract as much water as possible. You can even let the zucchini sit out overnight to remove every last extra drop.
  • Don’t overcrowd the pan. When frying, work in batches and avoid sticking the fritters too close together in the pan. If they are too close, they’ll create steam which will make them too soft.
  • Use hot oil! Don’t add the fritters to the pan until the oil is nice and hot. You can test the oil by dropping a small piece of fritter batter into it. If it sizzles and starts cooking immediately, it’s ready to go!
  • Also make sure to use enough oil. If there isn’t enough oil to fully submerge the fritters, they won’t cook evenly and won’t crisp up.

What Dipping Sauces Go Well with Crispy Zucchini Fritters?

There are so many great options to serve with your zucchini fritters! I love them with some {plant-based} sour cream and green onions and sometimes even a fried egg, but here are some other options:

  • Tzatziki Sauce
  • Marinara Sauce
  • Garlic Aioli
  • Sour Cream and Chives
  • Honey Mustard Sauce

What Are Some Good Main Dishes to Serve with Crispy Zucchini Fritters?

You can serve these fritters with whatever you want, but they’re especially great with some lighter fare like grilled chicken, grilled fish, or salad. They can also be a meal on their own when served with some hummus and pita bread!

Can I Use a Different Vegetable, Like Carrot Fritters or Potato Fritters?

Those would both make absolutely delicious appetizers, but I wouldn’t recommend using this recipe to make them. Zucchini has a lot of water, which means the process of cooking these fritters is very different than making fritters with other vegetables.

How Long Do Leftover Zucchini Fritters Stay Fresh in the Fridge?

You can store leftovers of these crispy fritters in an airtight container for up to 3-4 days in the fridge. Make sure you allow them to cool to room temperature before storing them or you might end up with soggy fritters.

To reheat them, preheat your oven to 350 degrees, place the fritters on a baking sheet, and bake for 10-15 minutes or until heated through and crispy.

If you won’t be enjoying these within a few days, you can also freeze them. Place them in a freezer-safe container or food storage bag and freeze for up to 2 months. To reheat from frozen, thaw them in the fridge overnight and then follow the same reheating instructions above.

Can I Make Crispy Zucchini Fritters in the Air Fryer?

Yes! To make these in the air fryer instead of on the stovetop, follow these directions:

  • Preheat air fryer to 375 degrees
  • Follow the recipe as written {stopping before frying, of course}
  • Spray the air fryer basket with cooking spray
  • Place the zucchini patties in a single layer in the air fryer basket, making sure to leave a little space between each one
  • Spray the tops of the fritters with cooking spray
  • Cook for 6-8 minutes, flipping halfway through, or until the fritters are crispy and golden brown

As all air fryers are different, be extra careful to keep an eye on your crispy fritters and adjust your cooking time as needed in either direction

FAQs

Why are my fritters not crispy? ›

The most common causes for soggy fritters are too much batter (basic flour and egg batter like used in pancakes will never cook up crispy), and whatever you're frittering leeches too much water when cooking.

Does baking soda make fritters crispy? ›

Is baking soda or powder best for frying? A pinch of baking soda can help produce crispy fried foods. It reacts with the acid in the batter to create carbon dioxide bubbles. These lead to an airy batter and a crisper, fluffier result.

How do you keep zucchini from getting soggy when frying? ›

Yes, you should always salt your zucchini before frying — especially if you're aiming to achieve a crispy texture. Salting your zucchini helps remove the excess moisture stuck in the zucchini that would otherwise make frying a challenge.

Why are my vegetable fritters soggy? ›

If you have too much oil in the pan or it isn't hot enough before you add the batter, the fritters will absorb the oil and become soggy.

What makes batter more crispy? ›

Use Cornstarch or Rice Flour

Michael says that cornstarch or rice flour in combo with flour will give you the crunchiest batter.

What ingredient makes things crispy? ›

If you're craving some extra crunch, look no further than a staple you probably already have in your pantry: cornstarch. Cornstarch is frequently added to foods to give them an extra bit of crispiness, but for some reason it's not commonly included in roasted vegetable recipes.

Can I use cornstarch instead of flour for fritters? ›

You can also use cornstarch/cornflour, or tapioca flour, instead. Of course, you can certainly just use all-purpose flour, but the fritters will not be as crispy.

Does baking powder make batter crispier? ›

Water: Use very cold water for the crispiest results. Baking powder: Baking powder ensures a light and crispy exterior. Salt: A teaspoon of salt enhances the overall flavor of the fish batter.

Why do you soak zucchini in salt water? ›

Salt causes zucchini rounds to release excess water. This important extra step helps the zucchini to sauté rather than stew in its own juices.

How do you make zucchini so it's not soggy? ›

The secret to zucchini with the best flavor and texture is roasting it in a 450°F oven. Roasting zucchini at a high temperature instead of baking or sautéing helps develop browning and a slight char on the outside, which keeps it from getting soggy.

Why is my zucchini always mushy? ›

Mushy veggies are also often the result of overcooking. When the interior is loaded with moisture, you have to cook it for much longer to evaporate all of the water and avoid the interior having the unappealing, spongy, raw texture that eggplant and zucchini are notorious for.

Should fritter batter be thick? ›

Because fritters need to maintain their form and not run when they hit the oil, your batter should be sturdy and thick, more like paste than Elmer's glue. It's the mortar that holds your ingredients together.

Why are my fritters raw in the middle? ›

If the fritters feel raw and doughy on the inside there could be two possible reasons. One is that the oil is just too hot, causing the outside to brown too quickly. You may find that you need to reduce the heat under the pan during cooking.

Why is my batter not getting crispy? ›

Soggy batter prevention that works every time

If you've gotten the dreaded limp fried coating, you might have over-mixed your batter, which forms more pesky gluten that readily soaks up the oil. Mix batter until just combined — no more, and no less. You might also be making the mistake of adding warm water.

Why is my deep fry batter not crispy? ›

It's usually just oil temps. A trick I learned to get decent fried chicken and such without a thermometer was to put a chopstick into the oil to the bottom. If it starts bubbling at the tip then the oil is ready. If bubbles come from higher than just the tip of the chopstick, it's too hot.

Why are my corn fritters soggy? ›

The biggest reason fritters come out soggy are either the oil isn't hot enough, or too many are added to the oil at once. This recipe makes about 20 fritters, and you will want to cook them in batches of 5-6 at a time. Adding too many of them to the oil at once cools down the oil and results in soggy fritters.
