  1. How long can you keep it and can you use marachino cherries

  2. So I’ve attempted to make divinity so many times and can not get it right! The first few times it was to soft and would be like a dollar pancake when I was done spooning it out on the wax paper. Now I’ve made it 4 times and it seems fine until I spoon it out then it’s rock hard. So I thought I was mixing it to long so I’ve backed off and it’s still to hard. I don’t understand why people say to whip it until no more gloss...I feel like I whip it to long still waiting on the gloss to go away and then it’s to hard. The only time the gloss goes away is after I’ve already whipped it to long. I’ve whipped for 3-4 mins and that’s not long enough I whip for 4-5 mins and it’s rock hard. The taste is always good but the texture is too hard. Someone please help me!?!?

  3. What about the wet spoon with divinity?

  4. Posted under reviews, just finished this recipe, looks too shiny. Will it cool firm, or do I have to start over?

  5. Every time I make this it comes out way too thin. Is there an adjustment to the recipe to compensate for this? I use the exact measurements, and tried increasing temp to 265° and that did not help. I have a stand mixer, dribble slowly. I made 2 batches tonight and both are way too thin.

  1. Very good! Turns out everytime! Just a hint to make spooning it easier. Have a cup of cold water ready and dip your metal spoon in it when scooping it. Slides right off. (My Grandma taught me this)

  2. I love Divinity! My granny and I make it every Christmas and instead of stirring in the nuts we place a singel pecan on each one which makes it very pretty! This recipe is a good one!! I have one small change though, I decreased the sugar to 2 cups because my first batch was very stiff. My second batch was perfect! Like little pillows of goodness! My granny also says never to make it on a rainy day, too much humidity!

  3. Yummy! Just like my Auntie used to make. I used my Kitchen Aid and only needed to beat it at the 8 speed for about 3 minutes. Other than that I followed the recipe exactly.

  4. Just want to say to people who think you can't make divinity when it is humid, you can. When it's raining outside just reduce the amount of water in the recipe by about a tablespoon. Also, I remember from childhood, just spreading it out in a sheet pan and slicing it into squares. Doesn't look as pretty but is much easier and tastes just as good.

  5. This is my first experience with divinity, and it turned out spectacular! I love the tip another reader gave; beat until the mixture is no longer glossy. The other great tip is dip your metal spoon in cold water if it's getting to sticky to drop easily.

Tweaks

  1. Please tell novices that they need to mix until no longer glossy. I almost doubled the recommended time, but this batch turned out great. Also, the tip about the wet spoon is good one.

  2. I omitted 1/2 cup of sugar and used peppermint oil instead of vanilla.

  3. My daughter and I made this recipe for divinity today and it turned out great! I switched beaters from my whipping beater to the regular beater after the egg whites were beaten before gradually adding the syrup. I had a sink full of hot soapy water waiting for the pan, mixing bowl and untensils and clean up was a breeze too! It is truly perfect divinty and I am very pleased.

My name is Nita and I am a 50 y/o grandmother of 3 beautiful children; a 13 y/o granddaughter, a 11 y/o grandson, and an 5 y/o old grandson. My daughters are 34 and 22. Yikes! Where did the years go??I rescue wolves and have 4 of my own...my big ole furbabies. I've placed appx 30 wolves in wonderful forever homes. Hobbies include cooking/baking, reading, gardening, writing poetry and short stories, and collecting angels, lighthouses and teapots...just to name a few. One of my passions is doing my part to take care of our natural environment and one of my pet peeves...hmm...that's a tough one...ok, 2 of my pet peeves are people who litter and people who talk loudly on cell phones while eating in a restaurant or shopping in supermarkets (give us a break, folks...at least lower your voices!). I love trying new recipes and meeting people. I'm a real nature nut and adore animals, having had some very "unique" pets. I love camping, fishing and picnics. I lived in Texas for 25 yrs but have recently moved back to my hometown in Oklahoma to be near Mom. She's elderly and her health isn't good, so it was time. Through the grace of God Mom and I are now neighbors! It broke my heart to leave my two girls and their families on the coast in Texas although knowing I'm where I need to be at this time makes the transition easier. Am very much looking forward to making lots and lots of new friends here at Zaar!

FAQs

Why is my divinity not fluffy? ›

There could be several reasons that your divinity did not turn out fluffy: The syrup was not at the right temperature when it was added to the egg whites. The egg white and syrup mixture was not beaten long enough. The humidity was too high.

Why is my divinity not hardening? ›

If your divinity candy fails to harden, add 2 tablespoons of powdered sugar and beat again. Allow it to rest for about 15 minutes. This will absorb more moisture and will allow your sweet treat to harden. If you want your divinity candy to soften up a bit add hot water a tablespoon at a time and beat it again.

Why is my divinity chewy? ›

Corn Syrup – This is added to stop the sugar from crystalizing giving you a very smooth, chewy texture that's not grainy. Sugar – White granulated sugar is the best for this recipe, avoid brown sugar or it'll affect both the taste and look of the divinity.

What is the best weather for making divinity? ›

What weather is best? The old classic candy divinity is one such candy that needs a good, dry forecast for several days when making. This cloud-looking candy can be a fickle beast to make if there is too much humidity around. The candy needs drier air to set properly.

Why is my divinity not holding its shape? ›

Just like any other divinity, you must beat it long enough, so don't lose patience with the process! Mixture will thicken once you beat in enough cool air and it begins to look dull and not shiny. If you try to drop it when it is still too hot and thin, it will not hold its shape and it is not ready!

Why can't you make divinity on a rainy day? ›

Because of the high sugar content, divinity needs dry air to dry itself. On high humidity days, the divinity will absorb moisture from the air. This means the divinity will have a gooey texture to it.

What do I do if my divinity is too runny? ›

No matter how long you beat the mixture, it will remain too runny to form into mounds. Tips: Cook the syrup mixture in a heavy saucepan. Use a candy thermometer and double-check that the syrup has reached the hard-ball stage by dropping a small amount in cold water.

What can I do with divinity that didn't set up? ›

But if your divinity fails to harden, you can beat in two tablespoons of powdered sugar and allow the mixture to rest a few minutes; if the candy hardens too much, you can blend in hot water a tablespoon at a time until the perfect, fluffy consistency is reached.

How to thicken divinity? ›

Divinity should be dry and set within two hours, but have patience. It may take a little longer. If you would like to try correcting a thin divinity, beat in a little bit of powdered sugar at a time until the consistency is drier and thicker, before dropping onto sheets of waxed paper again to dry.

Why does divinity fail? ›

Now, making divinity comes with all kinds of warnings about humidity and weather. You can't make it if it is "too" humid or if it's raining. The moisture in the air will keep the candy from setting and drying properly.

Why did my divinity go flat? ›

Extremely humid days can cause Divinity to become too moist. In other words, fall flat and be too sticky. Extremely dry days, like the Santa Ana conditions we experience here in Southern California, can cause the Divinity to become too dry and brittle (See Trouble Shooting section below).

Why is my divinity gritty? ›

Consider this: divinity hates humidity. It's best to make divinity on a cool, dry day. If it's humid (over 50%) or rainy, the candy might end up with a more gooey, or grainy texture.

How long is divinity good for? ›

Store at room temperature 1 to 2 weeks. Layer fudge pieces or divinity between waxed paper in an airtight container to prevent from quickly drying out.

Does divinity freeze well? ›

Yes, divinity can be frozen for up to one year! Flash freeze the candy for a few hours or up to overnight, then transfer it to a freezer-safe container. Thaw at room temperature.

Is divinity supposed to be soft? ›

Divinity is a nougat-like sugar candy that is aerated with egg-white foam. It's a cross between a meringue and a candy, and can be soft and chewy, or hard and crunchy depending on temperature and ratio of sugar syrup to egg whites. When done right, it's light, fluffy, and well – simply divine.

What to do with failed divinity candy? ›
