This traditional Finnish soup, featuring the goodness of salmon, potatoes, and dill, is a celebration of the country’s rich maritime heritage and the bounties of its pristine lakes. Join us as we explore the cultural significance and savory delights of Lohikeitto, providing you with a taste of the heartwarming essence that defines Finnish culinary traditions.
Ingredients:
- 500g salmon fillet, skinless and boneless, cut into chunks
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 carrots, peeled and sliced
- 1 leek, sliced
- 1 celery stalk, chopped
- 1 liter fish or vegetable broth
- 1 bay leaf
- A handful of fresh dill, chopped
- Salt and pepper, to taste
- 150ml heavy cream (optional)
- Butter for sautéing
Instructions:
- In a large pot, melt a tablespoon of butter over medium heat. Sauté the chopped onions until translucent.
- Add the leek, carrots, and celery to the pot. Cook for a few minutes until the vegetables start to soften.
- Pour in the fish or vegetable broth, and add the diced potatoes and bay leaf. Bring the mixture to a gentle boil.
- Reduce the heat to simmer, cover the pot, and let it cook until the potatoes are tender (about 15-20 minutes).
- Once the potatoes are cooked, gently add the salmon chunks to the pot. Cook for an additional 5-7 minutes until the salmon is opaque and flakes easily.
- Season the soup with salt and pepper to taste. If using, pour in the heavy cream for added richness.
- Remove the bay leaf, and stir in the chopped dill just before serving.
