2-Ingredient Fudge

With a base of white chocolate and my 4-Minute Lemon Curd recipe,this fudge recipe is simple and super quick to make.

I am somewhat of a "fudge freak"! Even as a kid, I remember sneaking down to basem*nt to our big chest freezer and sneaking fudge during the holidays. In fact, I think I actually prefer super cold fudge over room temperature fudge....something about that cold and creamy sweet taste that kept me going back for more!

Store this sugar-free fudge in the refrigerator or in the freezer for a quick keto dessert that you can grab, whenever you are craving something sweet.

I like to keep a batch of this creamy rich sugar-free fudge frozen at all times and sometimes I even make a double or triple version of this easy keto dessert!

Since all my fudge recipes contained either chocolate or caramel, I decided to create a "pucker your lips" lemon sugar-free fudge that would be perfect for the spring and the upcoming summer months!

KETO LEMON FUDGE

When life gives you lemons, you HAVE to make thissmooth and creamy lemon fudge. It’s a delicious sweet treat and, using a homemade super easy 4-Minute Microwave Keto Lemon Curd Recipe, and sugar-free white chocolate, this fudge is such an easy keto dessert!

If you're following the keto lifestyle and you have a sweet tooth you're going to want to make a batch of this keto lemon fudge to keep in the refrigerator or freezer.

It's the perfect combination of sweet and sour and and just one square of this keto lemon fudge will curve any cravings you have for sweets.

Until recently,my Buckeye peanut butter fudgewas my favourite keto fudge recipe. However, with my lemon tree going crazy, I decided to see if creating a "sour" fudge would be able to compete.

The thing that I love most about this keto lemon fudge recipe is that it's super simple and you don't need any fancy equipment or a candy thermometer to make it.

This recipe can easily be made using a microwave but if you don't have a microwave you can heat up the sugar-free lemon curd as well as the keto white chips on the stove.

You can always add a couple of drops of yellow food colouring to brighten this easy keto fudge as well as stir in some of my 2-ingredient Keto Homemade Coconut Funfetti Sprinkles for some extra colour.

Is This Traditional Fudge?

If you’re looking for a traditional fudge recipe, this is not it, however, it does havethe classic fudge texture and richness.

Traditional fudge is harder to make without sugar and also requires much more skill than this easy keto dessert. So, although this keto lemon fudge can not be stored at room temperature like traditional fudge, I am completely ok with that!

Plus, since recipe is so easy, it is impossible to go wrong and we all know how expensive mistakes can be when using costly keto and sugar-free ingredients.

EASY KETO FUDGE INGREDIENTS

Lemon Curd- By using lemon curd, you are essentially adding butter and lemon flavour with one ingredient. The lemon curd adds the necessary fat that all fudge needs, which creates a smooth and creamy keto fudge. IF you haven't tried my 4-Minute microwave lemon curd recipe, I can tell you that you are honestly missing out! For a quick recap, butter, eggs, sweetener and lemon juice are stirred together and then cooked in the microwave for 4 minutes, stirring every minute. Seriously...that is all it takes to make lemon curd! Don't have a microwave, no worries! You can use my Easy Sugar-Free Lemon Curd recipe that uses the stove instead.

Sugar-Free White Chocolate Chips- You can use whichever sugar-free white chips or melting chips to make this keto fudge. My favourite brands are ChocZero and Bake Believe Melting Wafers (do NOT use their white chocolate chips as they will not work well in this recipe!

Keto White Chocolate

As I stated earlier, I have used both ChocZero White Chocolate Chips as well as Bake Believe Melting Wafers.

Although both brands of keto white chocolate taste amazing, they can not be "completely" swapped out due to the difference in their ingredients.

As it turns out, the FDA officially requires that anything labeled "White Chocolate" must contain cocoa butter. ChocZero White Chocolate Chips contain cocoa butter whereby Bake Believe White Melting Wafers contain palm oil.

White chocolate made with cocoa butter creates a slightly more creamy confection. However, white chocolate is also softer in structure than White Melting Wafers (that do not contain cocoa butter). With that being said, you will need to use MORE sugar-free white chocolate than white melting wafers.

I actually REALLY like the Bake Believe White Melting Wafers. I do not really care for any of their other products but actually prefer their melting chocolate to ChocZero's White Chocolate Chips!

Also, since they are much cheaper (9 oz for $5 for Bake Believe versus $7 for 7 oz for ChocZero chips), and require a smaller quantity to make this fudge, the sugar-free melting wafers of my first choice for this recipe.

However, if you only have ChocZero or Lily's on hand, you can absolute use these instead but you will need to add reduce the amount of lemon curd and keep the fudge in the freezer.

KETO FUDGE OPTIONS

If you like your fudge a bit on the fancy side you can add the following ingredientsas mix-ins. Just note that except for the extracts, the total macros may change depending on which ingredient you add to your keto fudge recipe.

For a twist on flavours - Add a couple of drops of extracts such as vanilla, coconut, rum or lemon extract. You could always add some almond extract as well.

For some Crunch - Add about ¼ cup of your favourite chopped nut or seed, such as pecans, walnuts or macadamia nuts.

For some texture - Add some shredded coconut and for some extra fun, add some of my coloured Keto Homemade Coconut Funfetti Sprinkles

HOW DO YOU MAKE MICROWAVE KETO LEMON CURD?

Here is a quick recap on making my 4-Minute Lemon Curd. For the official recipe, click here!

  • Melt the butter in a large microwave-safe bowl, usually about a minute on 50 percent power
  • Add the allulose and salt and whisk together
  • Add the whole eggs and egg yolk and whisk again.
  • Add the lemon zest and juice and whisk well until everything is thoroughly combined
  • Microwave for 1 minute.
  • Remove the bowl carefully as it may be very hot and whisk
  • Continue to microwave in 1-minute intervals, whisking after each minute, until the mixture is thick - this usually takes about 4 minutes, depending on the microwave and the size of the bowl - Note the mixture will thicken as it cools
  • Carefully remove the bowl from the microwave and allow it to cool fully
  • Once cooled, push the curd through a fine-mesh sieve into another bowl.
  • Refrigerate until set, at least 2 hours

How to make easy Keto lemon fudge

  1. Stir lemon curd into the sugar-free white chocolate.
  2. Place the bowl in the microwave and heat at 70% power for 90 seconds then let the bowl rest in the microwave for about 3 minutes before stirring.
  3. If all the sugar-free white chocolate doesn’t melt, let it rest a few more minutes then stir again.
  4. If needed, heat for 15 seconds at 70% power and repeat the process above.
  5. Spread the keto lemon fudge into a parchment paper lined 4X8 loaf pan. Refrigerate for 1 hour, or until firm.
  6. Remove the parchment paper from the dish and using a sharp knife, cut into 16 squares.

HOW TO STORE KETO FUDGE

This keto chocolate fudge is basically a refrigerator fudge. It melts easily and needs to be stored in the refrigerator or freezer.

Tips and tricks for this 2-Ingredient Fudge

  • You will need to wait until the fudge is completely solid before cutting it
  • You can cut this keto chocolate fudge into smaller or larger pieces depending on your preference. Just make sure to divide the total macros and carbs by the number of pieces you cut.
  • I developed this recipe using sugar-freeBake Believe White Melting Waferswhich made a wonderfully flavoured fudge. Bake Believe White Melting Wafers are actually considered a confectionery coating because they are made using vegetable oil (palm kernel oil) instead of cocoa butter which is used to make sugar-free white chocolate.
  • You can use sugar-free white chocolate chips (from ChocZero or Lily's) to make this fudge but know that the lemon flavor will not be quite as intense because the flavour of the cocoa butter will mute the lemon flavor slightly. Also, you will probably need to add about ¼ cup more sugar-free chocolate chips to get this fudge to set properly and you may need to store it in the freezer.
  • This fudge must be stored in the fridge or freezer

For Lemon Fudge using Melting Wafers

  • 2 cups sugar-free white melting wafers (I used Bake Believe)
  • ¾ cup sugar-free lemon curd

For Lemon Fudge using White Chocolate Chips

  • 2 cups sugar-free white chocolate chips (I used ChocZero)
  • ½ cup sugar-free lemon curd

Instructions

  1. Line an 8 x 4-inch loaf pan with aluminum foil or parchment paper. Set it aside.
  2. Stir lemon curd into the sugar-free white chocolate.
  3. Place the bowl in the microwave and heat at 70% power for 90 seconds then let the bowl rest in the microwave for about 3 minutes before stirring.
  4. If all the sugar-free white chocolate doesn’t melt, let it rest a few more minutes then stir again.
  5. If needed, heat for 15 seconds at 70% power and repeat the process above.

Notes

  • melting wafers do NOT contain any cocoa butter whereby white chocolate chips contain cocoa butter
  • Sugar-free white chocolate chips will produce a softer fudge; for a firmer fudge, store the fudge in the freezer
  • This keto fudge must be stored in fridge or freezer
  • you can cut this fudge into any size you want - I cut my into 21 pieces.
