Let’s talk Bonito flakes. Bonito flakes? What are they? They are in fact fish that have been simmered and smoked and then shaved— they literally look like little shavings and they can be used for everything from making stock, to seasoning to a finishing topping. The taste is amazing— slightly smoky, savory with a mild fish flavor and are one of the most essential flavor agents in Japanese cooking.

For this recipe the good old Grilled Cheese we all know and love— crispy bread, melted delicious cheese— is going to get a finishing sprinkle of bonito flakes on top— and what you’ll actually see is something amazing when the flakes it the hot toasted bread—the heat will cause these thin shards to move around like they’re dancing— it’s super fun and super delicious as the bonito flakes will add delicious layer of complexity and depth! Bonito Flake Grilled Cheese — Peter Som (1)

Makes 1

INGREDIENTS

2 slices good bread
2 tbsp mayonnaise (Kewpie recommended)
2 oz mozzarella cheese, grated
2 slices American cheese
⅓ cup bonito flakes, plus more to taste
1 tbsp unsalted butter, room temperature

METHOD

Butter one side of bread, then spread mayonnaise on the other (the ‘inside’).

Layer mozzarella and American cheese on mayo side of bread and top with second bread slice.

On skillet over medium heat, melt butter and toast sandwiches on both sides for 3-4 minutes or until golden brown and cheese has melted. Cover pan with a lid for final 1-2 minutes to ensure cheese has melted. Transfer to a plate and top with bonito flakes. Cut in half and serve immediately.
