New and updated roasted beetroot hummus recipe made with homemade tahini, chickpeas, olive oil and all good things. So perfect when for a healthy chip & dip session or when you have left over chickpeas and want to make something yummy ( <-- mostly my favourite reason to make this!)

This thing right here: this is my favourite thing to eat for breakfast. Multigrain toast, topped with homemade roasted beetroot hummus & some smashed avocado + some sesame seeds .... so YUMMY!

This beetroot hummus is an upgraded version of my regular hummus recipe with an addition of oven roasted beetroot that is cooked with olive oil and salt. With a spoonful of homemade tahini sauce (with roasted sesame seeds) and lemon juice, you get a very creamy, delicious, smooth hummus to be enjoyed with crackers or chips.

How to make roasted beetroot hummus?

  • start by roasting some chunks of beetroot which have been tossed in some olive oil and salt.

While the beetroot is roasting in the oven, assemble the rest of the ingredients for your beetroot hummus.

  • Boiled Chickpeas
  • Olive Oil
  • Tahini Paste (recipe below)
  • Salt+Pepper
  • Lemon juice

How to make homemade tahini?

simply mix 1/4 cup of toasted sesame seeds (dry roast the sesame seeds for a few minutes in a pan) with 1/4 cup of water and you have a creamy tahini paste ready to be used for the beetroot hummus.

Then simply blend all your ingredients and enjoy with some lavash or toasted bread of crackers.

HOMEMADE TAHINI PASTE

  • 1/4 cup toasted white sesame seeds
  • 1/4 cup water

ROASTED BEETROOT HUMMUS

  • 1 cup chickpeas (boiled)
  • 2 medium sized beetroots (peeled and chopped)
  • 1 tbsp lemon juice
  • 6 tbsp water
  • 1 tsp garlic (chopped)
  • 2 tbsp tahini paste
  • salt
  • pepper
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, add chopped beetroot, 1 1/2 tbsp olive oil and salt. Mix and transfer to a baking sheet. Roast for 20 minutes. Let cool. This should give you about 3/4 cup of roasted beetroot.
  2. Prepare the tahini paste by blending toasted sesame seeds and water. Keep aside to be used for hummus.
  3. To a blender/ food processor, add boiled chickpeas, 3/4 cup roasted beetroot, remaining olive oil, salt, lemon juice, garlic, 2 tbsp tahini paste, water and mix until you have a really smooth hummus.
  4. Sprinkle mixed seeds (sunflower, pumpkin, sesame) and chopped cilantro/ coriander or parsley and serve with chips or crackers.

Homemade Tahini Paste

  • 1/4 cup toasted white sesame seeds
  • 1/4 cup water

Roasted Beetroot Hummus

  • 1 cup chickpeas (boiled)
  • 2 medium sized beetroots (peeled and chopped)
  • 1 tbsp lemon juice

  2. In a large bowl, add chopped beetroot, 1 1/2 tbsp olive oil and salt. Mix and transfer to a baking sheet. Roast for 20 minutes. Let cool. This should give you about 3/4 cup of roasted beetroot.

  3. Prepare the tahini paste by blending toasted sesame seeds and water. Keep aside to be used for hummus.
