    I tried making a roux with the coconut flour and coconut oil. I tried it twice and both times the roux was very grainy and a total flop. It might be fine for baking but for a roux for a gumbo don't even try it.

      Well for every 1 cup of flour, you're supposed to use 1/4- 1/3 cup coconut flour. So use 1/2- 2/3 cup coconut flour in place of 2 cups regular flour. Add 2 more eggs. Boom. Math.
